Mikey & Gina Giugni, established Scar of the Sea Winery in San Luis Obispo, California in 2012. They work together as husband and wife to produce wines that speak of the Central Coast of California. This particular bottling is made with whole cluster pressed, oxidative juicing, barrel fermentation in old 225 L French oak barrels, Native yeast, aged on lees without additives for 10 months. It’s bottled unfiltered and unfined with minimal SO2 added at bottling. The result is a wine that captures some of the most alluring elements of what we think of as California Chardonnay; an almost tropical profile of ripe flavors, but made with restraint, this wine skips the excess and heavy-handedness that has sunk the reputation of California Chardonnay. Lemon, green apple and crème brulée with crushed seashells and jujubes. The richness is balanced by bracing acidity making it appealing sip after sip. There is a powdered candy quality to the salty minerality that reminds of sweet tatrts and banana flavored runts.
Pair it with: Sole Meunière. Roasted guinea hen. Vadouvan roasted carrots. Smoked salmon on toast. Butternut squash risotto with sage. Grilled rapini covered in a shower of shaved parmesan. The hard-boiled egg curry at Bollywood theater. Samosas. Schmaltz roasted potatoes.
