This Gamay hides how serious it is with its sheer deliciousness. It turns out this is even true as a lightly chilled wine as we head into warmer Spring days. Pascal has grown his very small vineyard holdings into a still very humble estate with vines planted in excellent sites in a few Cru appellations. This one is from a single vineyard planted in 1939 in grantic soils of the Chénas Cru brings depth and lots of red and black fruit. Cherries, plump raspberries, Red Vines candy, prickly ash and herb-spice. 

Pair it with: Tapas. Proper Greek Gyros. Naan bread. Burgers. The Roti and dipping curry from Hat Yai. Flautas. Beef hot dogs. Almost anything covered in Dijon cream sauce. Carbonara. Chile con carne (or without the carne). Pizza.
