From Mimi Casteel: “Monday’s Child is fair of face, Tuesday’s Child is full of grace”
Monday’s Child and Tuesday’s Child are the first of a set of three wines made in 2019 as an exercise in prismatic infusion. Three Pinot noirs, picked at the same time, with different skin macerations, each in three vessels, striking different notes in harmony. Monday’s Child spent less than 24 hours on the skins and went to press cold. A cold and brief infusion to preserve the layers of crisp flavor and the effusive bouquet of spring flowers and berries.
From Ksandek: There is no where on the label, or in Mimi’s writings, declaring this a rosé. It is simply titled “Pinot noir”. and It certainly delivers on the promise of pinot noir; a sense of time and place. In the context of Rosé, however, this is an eye opening wine that shows how high this category can climb. Simply beautiful.
